good morning!
This is Yosugaya.

When you walk through the morning market, you will not only find the standard vegetables you see in supermarkets, but you will also often come across rare vegetables that you have never tried before.

Kinjiso is a perfect example of this.

Mr. Iwama, a veteran exhibitor next to us, was setting up his items.
It is a traditional vegetable of Ishikawa Prefecture, so it seems that not many people grow it in this region.

It is rich in polyphenols and packed with nutrients, and can be eaten raw after a quick rinse with water.
I prefer sesame dressing.
