■ Purchased at the fishery, including simmered tuna head
After parboiling the tuna head, discard the water and rinse it with water to remove any dirt.
Make a sauce with water, sugar, mirin, sake, soy sauce, and sliced ginger. Bring to a boil, add the heads, pour in the sauce, and simmer slowly over low heat. You can also simmer the daikon radish together if you like.
