On an early spring morning, with the gentle smoke rising from the wood stove, after a long winter, butterbur shoots (bakke) suddenly appear. When bakke line the stalls at the morning market, it's a sign that spring has arrived.
Homemade "bakke miso" by the local farmers is highly recommended during this season! I didn't eat it when I was younger, but now I've come to appreciate its subtle bitterness.
Perhaps being at the morning market helps one develop a palate that truly savors seasonal ingredients (lol).
